What Would You Attempt to Do, If You Knew You Would Not Fail?
Avoiding an answer like “I’d find a cure for cancer” (which is a noble cause, surely, but probably a common answer), I’m going to be selfish:
Parachute! I do not like heights, but I love being in the air and looking around for miles and miles. I love skiing because I love the outdoors and the scenery. If i was sure I wouldn’t be injured – my interpretation of “not failing” - I would love to jump out of a plane and feel the tug of the parachute and the whoosh of the air in my ears. I think if I had the security of that heavy silk and lines, I wouldn’t be scared. My father-in-law was a parachute-packer in World War II. I didn’t realize until I thought about it – that is one incredibly important job! Imagine being the paratrooper who just grabs his pack and gets on the plane, not able to worry “will this open?” but instead “I hope there’s nobody on the group shooting up at me.” Parasailing looks like fun, too (I love to water ski) but jumping out of that plane? wow.

Parachute? I was expecting “Participate in national Scrabble tournament” or something like that! But you were expecting “Participate in math and piano competitions” out of me.
